Upon arrival, the guide should lead the guests to their seats, and tell the tour leader where he/she and driver will have their meals. Most likely, many tourist members will want to go to the washroom before the meal. So an experienced guide should tell his/her tourist members where the lavatory is located. If necessary, he / she should also tell him/her guests details about the catering service, for example: the menu, whether or not drinks and beverages are included in the bill, any special requirement of the tourist, etc.
When the guests have started eating, don not forget to wish them "Good appetite" before leaving for dinner himself / herself.
Normally the guide and the driver eat at a separate table instead of eating together with tourists. At that time, the guide and the driver feel at home and may discuss future tour plans. However, the guide should go to the tourists occasionally to supervise the food and service quality and ask the tourists for their opinions about the catering during the meal.
Sometime, however, the guide might be invited by the tour group to have dinner, together, espeeially for the last dinner of the tour. When dining with tourists at the same table, the tour guide should be polite and respect his/her guest, and he/she should never do anything against the guests will. As a guide, he/she should get to know the basic table manners and behave properly. For example, the minute he/she sits down, the guide should spread the napkin upon his/her lap and never put the soiled napkin upon the table if he/she leaves it for any reason in the middle of the meal. He/She should put it on the seat of his/her chair, out of sight of the others who are eating. Eat quietly. Remember not to talk and eat at the same time.
Apart from table manners, the guide should have a wide knowledge of Chinese cuisine. For instance, due to the great differences in the climate, geographical environment, region, and historical and cultural development of different regions, various styles of cuisine have been formed with their own feature. According to the local flavors, Chinese cuisine is subdivided into a gleat number of schools.
