香樁之栽培與利用

香椿(Cedrela sinensis Juss.)為棟科(Meliaceae)多年生落葉性喬木植物，英文名為Chinese mahogany；原生中國東南、西南至華北一帶，以山東、安徽、河南及河北等地栽培最多，椿芽並外銷至東南亞、韓國及日本等地區。香椿別名為椿、紅椿及椿甜樹等，在景觀及造園上為常見之應用數種。除樹幹可做家具外，因其嫩葉可食，自古即一直被當成蔬菜食用，亦是傳統的藥用植物。利用部位為樹皮、根皮、葉及果實等，具有多種用途。《左氏春秋》記載，戰國時代已將香椿當成用材樹種並加以栽培。而《唐本草》則最紀錄香椿的藥用價值，謂之「葉煮水，可洗疹、疥、風、疽」。明代李時珍在《本草綱目》中將香椿用途詳加說明，使其價值更為人們所瞭解。然而香椿隻食用起於何時則已無從查考；文獻典籍《採菜錄》、《菜植誌二》、《丹溪心法》、以及《經驗方》等皆歸之為「菜」。依《花木考》所載，金朝時期有「溪童相對采椿芽」之詩句，可見在當時人們已知「采椿芽，食之以當蔬」了。明朝時期，山東地區已有種植香椿且當成朝廷中之貢品，其椿芽為紫紅色、味濃厚、纖維少。顯然香椿被當作蔬菜栽培已是淵源流長了。
